Each Wednesday, the chef prepares an intimate six-course tasting menu in the private dining room of Le Bistro. Incorporating the freshest of ingredients from the resort’s own hydroponic farm, the menu is ever-changing and includes wine pairings specially selected from the resort’s award-winning cellar.
Inspired by the villas of Greece, the whitewashed Italia presides over stunning views of the golf course, St. Maarten and the Caribbean Sea. Chef Massimo Seletti serves a selection of house-made pastas and traditional Italian specialties culminating in his signature tiramisu.

At Anguilla’s only AAA Four Diamond restaurant, Executive Chef Daniel Le Guenan creates simple, innovative cuisine using local products infused with Mediterranean flavors. The breezy indoor-outdoor dining room pairs well with the elegant cuisine as do selections from the resort’s award-winning wine cellar.
Set on the white sand beach that hugs Rendezvous Bay, the Beach Bar and Grill specializes in a light menu of hydroponic salads, local island fare and grilled fish and meats on skewers. Wash it down with fresh fruit smoothies, housemade lemonade or specialty island cocktails.
Anguilla's first authentic Japanese restaurant, Tokyo Bay serves sushi, sashimi, teppanyaki, and omakase. Chef Ken Lin takes a modern approach to the Japanese fare with fresh, local seafood and produce from the hotel’s hydroponic garden. It’s all served in a sleek dining room overlooking the sea and St. Maarten.
