Named after the noble who converted the monastery into a hotel, the Principe Cerami celebrates the past and future of the region’s cuisine. Chef Massimo Mantarro earned two Michelin stars for his reinterpretation of classic Sicilian dishes like squid ink tagliatelle carbonara and spaghetti with lobster, sea urchin and almond milk.
