Inside Hotel Casa Fuster's Galaxó Restaurant, chefs create a four-course tasting menu, which re-imagines the fashionable Catalonian cuisine of the late 19th and early 20th centuries. Each course references the reliefs, mosaics, stained glass windows, and vibrant colors so beautifully prevalent in the architecture of the era.
First things first. The palate is prepared with a taste of Spanish vermouth on the Hotel Casa Fuster's Mirador Blue View Terrace. The popular aperitif of yesteryear was offered in wealthy homes or high-end establishments before a good meal to whet one’s appetite. Enjoying somewhat of a resurgence, today you'll find the fortified wine flowing liberally on terraces throughout the city.

For the next chapter, the colorful, four-course tasting menu is inspired by Barcelona's Modernist architecture and décor. Begin the experience with a raw codfish salad, meant to reflect the colorful Park Güell's numerous mosaics.
Select from two choices for the main course: Window to the Sea, an authentic Mediterranean seafood stew, elevated by the addition of clams, chopped hazelnuts, and saffron. The other option, Pel & Ploma ("Feather and Fur"), is named after an artistic and literary Art Nouveau journal, which was popular in the city in the early 20th century. The hearty dish of chicken with prunes, dried apricots, and pine nuts is a study in the flavors of Spanish cooking.
The finessed finales are dessert specialties of the house—crème brulée, renamed the Catalan Forge, or Parc Güell and Panots, a parfait decorated with panots (tiles) fashioned out of chocolate to look like the decorative pavement found throughout the city.
Sharp, fun, and original in its presentation, the menu, like the Modernists, is bursting with creative expression.
